Caciovallo in Italian, loosely translated infers a horseback... Fear not, this delicious southern Italian cheese is not related to any 'cavallo' or horse products and is manufactured very much like provolone. It's characteristic large tear-drop ball shape is a result of being hung to age. The taste and texture is very similar to medium bodied provolone and the thick skin is edible. This cheese has been featured in recipes on cooking shows such as the FoodNetwork and more... Sold as a whole ball and when available includes a rope around it's collar but no hitching post, sorry! Imported from Italy. Each unit weighs @5 lbs.
